Ingredients for Air Fryer Potato Wedges
potato – All taters are delicious, but I prefer Russet because of its high starch content. You can also use Yukon Gold potatoes, which have a more buttery texture. I don’t think the Yukon is that crispy, but the flavor is very good.
oil – Olive oil, vegetable oil, avocado oil, or coconut oil work well. Try adding a bit of leftover melted bacon grease to add a smoky flavor to your spuds.

Potato wedges are seasoned and deep fried until crispy on the outside and soft on the inside.

Preheat air fryer to 400°F.

Peel the potatoes and cut them in half lengthwise. Place cut side down on a cutting board. Cut each half into 4 wedges (5 wedges if really big).

Fill a large bowl with cold water and soak the wedges for 30 minutes (optional; this will remove the starch from the potatoes). Drain well and pat the potatoes dry with a kitchen towel or paper towel.

Toss potato wedges with oil and seasonings.

Place in one layer in air fryer basket and cook for 15 minutes. Shake basket and cook until crisp, stirring every 5 minutes, for an additional 10-12 minutes.
Preheat air fryer for best results.
Avoid crowding the basket so the wedges cook evenly. If necessary, cook the potatoes in batches. Once all batches are cooked, add all wedges to air fryer and heat for 2-3 minutes.
Leftover wedges can be reheated in an air fryer for 3-5 minutes.
