The chicken salad sandwich is a family favorite. they love them I usually have something in the fridge for sandwiches all year round. I like sandwiches with soup in the winter and potato chips for lunch in the summer. Chicken salad is a great way to put leftover chicken to good use. I think this recipe will become one of his favorite uses of chicken. This recipe can be doubled for a crowd or cut in half.
Chicken Salad Ingredients needed:
cooked chicken
onion
celery
Boiled egg
sweet pickle relish
mayonnaise
salt
pepper
Seedless red grape
Walnuts (as desired)
apple (optional)
I love this chicken salad on French bread, but it’s also great on Ritz crackers alone. Wrapping lettuce in a tortilla is also delicious.

This is a very versatile recipe. You can easily make some simple substitutions as well.
- Greek yogurt can be substituted for mayonnaise. If you prefer, you can use half Greek yogurt and half mayonnaise. I made it both ways. You can also add a little sour cream.
- Not a fan of sweet relishes? Use dill relish!
- Add apples with grapes, omit grapes, use apples only, or omit both. I like to add grapes.
- You can add smoked paprika to this recipe for a slightly different flavor.
- Save time with rotisserie chicken!
- Add pecans instead of walnuts or leave the nuts alone.

Your family will love this supreme chicken salad!
Serving: Five serving
- 2 cup chicken cooked and chopped
- 3 tablespoon onion chopped
- 1/4 cup celery chopped
- 1 big egg boiled and chopped
- 1 tablespoon Sweet and sour pickles You can use dill pickle relish
- 1/4 cup mayonnaise
- 1/4 tea spoon salt
- 1/8 tea spoon pepper
- 1 cup red seedless grapes Cut in half lengthwise (you can also use green grapes)
- 1/2 cup walnut chopped (optional)
- 1 small apple chopped (optional)

Add chicken, onion, celery and eggs to a bowl and mix. Stir and blend.

Add relish and remaining ingredients and stir well.

About 5-6 sandwiches.
