What is Blackberry Pudding?
Blackberry pudding is a cake made like cobbler and is delicious when topped with ice cream. I love having it for breakfast with coffee in the morning, but it’s also delicious with a glass of milk. When I was a kid, I always ate cobbler with milk, and this blackberry pudding I like that way. An old recipe that my family loves. It may be difficult to understand when using the word “pudding”, but it is a pudding-style cake.
This cake is made with simple ingredients:
- white granulated sugar
- all purpose flour
- baking powder
- evaporated milk or regular milk
- almond or vanilla extract
- fresh blackberries
- boiling water
Having most of these ingredients on hand is always a plus. If you’re growing your own blackberries, you’re all set. This dish is a great summer dessert. It can be reheated in the microwave, so I like to warm it up with ice cream and eat it.

This blackberry pudding is easy to make and a great dessert.
Portion: 8 one person
- 1 1/4 cup white granulated sugar Divided
- 6 tablespoon butter softened
- 2 cup all purpose flour
- 2 teaspoon baking powder
- 1/2 tea spoon salt
- 1 cup evaporated milk You can use normal milk
- 1 tea spoon almond extract You can use vanilla extract
- 2 to 2 1/2 cup fresh blackberries Can be frozen
- 2 cup boiling water
Place 1 cup cream mixer and 6 tablespoons butter in a large mixing bowl.
Add flour, baking powder and salt to a bowl and mix. Pour the flour mixture into the sugar and butter and continue mixing with the mixer.
Add milk and almond extract and mix well.
Spray a 3-quart casserole dish with cooking spray and spread the flour mixture over the bottom of the dish. Cover with blackberries and sprinkle remaining 1/4 cup sugar over berries.
Bring 2 cups of water to a boil and pour over the blackberries. Do not mix.
Bake in an oven preheated to 350 degrees for 55-60 minutes until golden brown.
Let cool for about 20 minutes before serving. Makes 8-10 servings.
