Microwave Parsley Potatoes - The Southern Lady Cooks

Microwave parsley potatoes are a super easy recipe and delicious. This little potato recipe appeared in my first microwave cookbook in the 70’s and I’ve been making it for 40 years. Great for making a quick potato side dish when you’re cooking a weeknight meal or whenever you’re craving potatoes. You can adjust it for two people or make it for several. This recipe is so versatile that you can make it yourself and add or reduce spices.

Microwave Parsley Potato Ingredients needed

butter

dried parsley (optional)

salt

black pepper

As you can see, it’s a recipe with only simple ingredients, but it tastes great! A simple side dish perfect for a busy night.These are the perfect side dishes for us brown sugar meatloaf!

You can easily make smoked sausage while the potatoes are in the microwave. It’s extremely versatile and saves time in the kitchen.

  • 4-6 medium potatoes peeled or quartered peeled (any kind of potato works)
  • 1/4 cup Water
  • 1/4 cup butter or 4 tablespoons
  • 1 tablespoon dried parsley flakes use more
  • 1/2 tea spoon salt
  • 1/4 tea spoon black pepper
  • Place potatoes and water in a microwave-safe bowl or casserole dish and cover. Microwave on high until potatoes are soft when stuck with a fork. Takes about 12 minutes, stirring half the time.

  • Remove potatoes, drain and set aside. Microwave until butter melts, then add parsley flakes, salt and pepper and stir. Pour over the boiled potatoes and mix. Serves 4-6 people.
