Pasta Fagioli Soup, also known as Pasta e Fagioli Soup, is hearty, comforting and delicious. And it’s done in less than an hour!
In a large soup pot or Dutch oven, heat olive oil over medium heat. Add ground Italian sausage and cook without moving about 1 minute. Crush using a wooden spoon and continue cooking until browned, 3 to 5 minutes. Drain excess fat.
Transfer the cooked sausage to one side of the pan, add the other half of the onion and garlic, and cook, stirring occasionally, until the onion is softened, 1 to 2 minutes.
Add chopped carrots, celery and diced tomatoes. cook, stirring, until softened, 4 to 5 minutes.
Add basil, Italian seasoning, thyme, rosemary, tomato sauce, chicken broth, and drained and washed beans. Season with ½ teaspoon each of salt and pepper.
Bring to a boil, reduce heat and simmer. Cover and simmer for 10-15 minutes, until vegetables are tender. Add more water, 1 cup at a time, if needed.
Pour water into a separate pot and bring to a boil over medium-high heat. Season with salt. Cook pasta according to package directions. Drain well and add a little olive oil. set aside.
When the vegetables become tender, add the pasta and stir-fry until cooked through.
Garnish with parsley and grated Parmesan cheese, if desired.
