Tater tot breakfast casserole is super easy to make and flavorful. My family loves potatoes, so of course I’m a big fan of tater tots. It is a very versatile ingredient. Perfect for breakfast, brunch, lunch and dinner.
Tater tot breakfast casserole ingredients:
- tater tots
- smoked sausage
- campbell cheese soup
- chopped onion
- chopped green pepper
- minced garlic
- black pepper
- sharp cheddar cheese
- colby jack cheese
How to serve tater tot breakfast casserole:
The great thing about casseroles is that you don’t have to prepare a ton of side dishes. Since this is a flavorful dish, it can be easily served with fruit or fruit salad. It’s also nice to match with fresh cream biscuits and old-fashioned sweet bread. These orange and blueberry muffins would be great too!

- I’ve never frozen this dish, but I’m sure it will freeze just fine. Just bake the dish and freeze it.

This tater tot breakfast casserole is super easy to prepare and full of flavor. that’s delicious!
Portion: 8 one person
- 1 32 oz Bag of Tater Tots (using Oleida)
- 1 lb of smoked sausage cut into quarter slices
- 1 Campbell’s cheese soup 10.5 oz can
- 1 cup of milk
- 1/2 cup of chopped onions
- 1/2 cup of chopped peppers
- 1 tablespoon of minced garlic
- 8 egg
- 1/4 1 teaspoon black pepper
- 1 cup sharp cheddar cheese shredded
- 1 cup colby jack cheese shredded
Preheat oven to 350 degrees. Spray a 9X13 baking dish and set aside. Heat a skillet over medium heat and sauté the onions, bell peppers, smoked sausage and minced garlic. Cook until the onions and peppers are soft. Removed from heat. Combine tater tots, sausage mix and both types of cheese in a large bowl, mix and pour into baking pan.
In another bowl, mix the eggs, cheddar soup, milk and black pepper. Once mixed, pour over the tater tot mixture.
Bake uncovered at 350 for 65-75 minutes, until eggs are fully cooked.
