The first time I made caramel ice cream was over the weekend when my husband was out. After I tasted it, I found myself unreliable on my own, so I forced myself to give the entire batch to a friend. (Yes, I have an ice cream problem.)
A week later I made this ice cream again for my family and it was a hit. Salted caramel is delicious. A little bit of salt brings out the caramel flavor beautifully.

To make this recipe you will need the following ingredients:
- light brown sugar
- butter
- heavy cream
- milk
- vanilla extract
- sea salt

Salted Caramel Ice Cream Recipe
First, put butter and sugar in a medium-sized saucepan and heat over medium heat. Once the butter has melted, mix the melted butter and sugar together.
Continue stirring while simmering until mixture thickens, foams, and caramelizes, about 4 minutes. Remove from heat.
Very slowly, pour the heavy cream into the hot caramel, whisking constantly. Continue whisking until smooth, making sure there is not too much caramel on the bottom of the pan. (A little bit at the bottom is fine.)
Add milk, vanilla and salt and whisk again until smooth. Cover and refrigerate until cool. Then process according to the ice cream machine manufacturer’s instructions.
Serve immediately for soft ice cream, or transfer to an airtight container and freeze for a few hours for firmer ice cream.
Scoop into an ice cream cone or serve in a bowl and drizzle with warm caramel sauce.
