Combine cream, milk, sugar, salt and vanilla. If desired, add blue food coloring to adjust color. Whisk again to combine.
Pour the mixture into an ice cream maker and freeze according to the manufacturer’s instructions. While you’re stirring the ice cream, cut the cookies into quarters.
Scatter 1 cup of cookie pieces in the bottom of a freezer-safe container. Once the ice cream is churned, scoop half of the ice cream onto the cookie in the container and sprinkle 1 cup of cookie pieces over the ice cream.
Spread the remaining ice cream over the entire container and place the remaining cup cookie pieces on top. Freeze until firm.
