Talk about cute brownies!! These Strawberry Brownies are a gorgeous, attention-grabbing brownie recipe that combines sweet strawberries and chocolate brownies.
Everyone loves chocolate-covered strawberries, so what could be better than taking all of these flavors and incorporating them into the prettiest brownies ever.
What does a strawberry brownie taste like?
I’ve seen strawberry brownie recipes before, but they’re typically made with strawberry cake mix and are more like cookies or cake bars than actual brownies. I’ve also seen one with strawberry jelly, but that’s not my style. I wanted to make brownies that were delicious enough to eat on their own, and topped them with a rich strawberry buttercream frosting.
The sweetness of the strawberry frosting combined with the chocolate brownie is dessert heaven. The perfect dessert for Valentine’s Day, Mother’s Day, Easter, or any time you want something sweet.
my secret ingredient:
OK, this is no secret, but my trick when making strawberry frosting. I love fresh strawberries, but since strawberries have a lot of water in them, adding butter can make the frosting slightly clumpy.To avoid this, I use high quality strawberry jam with my icing instead. You get the perfect sweet strawberry flavor without the excess moisture.
Alternative proposal:
- You can use strawberry jelly or strawberry jam if you like. Jelly doesn’t have as much strawberry flavor as jam, but keep in mind that jam usually contains larger fruits. Saving works fine if you don’t mind chunking.
- Another option is to use freeze-dried strawberries. These can be easily found in supermarkets. In fact, you can often find them at Trader Joe’s. Simply crush dried strawberries and mix into the frosting. This adds a strong flavor.
Recipe ingredients:
This recipe has three separate parts: brownie, frosting, and chocolate ganache layer.
Brownie:
- butter. I don’t add salt to my brownies, so I used salt in this recipe.
- unsweetened cocoa powder. You can use Dutch process, regular cocoa powder, or even dark cocoa powder. it’s up to you!
- big egg. I always use large eggs in my baking recipes. Make sure to use a large egg, as it will vary depending on the size of the egg.
- vanilla extract. The subtle vanilla flavor pairs beautifully with chocolate.
- Granulated sugar. You can use brown sugar, but this recipe recommends granulated sugar.
- all purpose flour. No baking soda or baking powder is required for this recipe. The brownie doesn’t look cakey, it stays rich and fluffy.
Strawberry frosting:
- butter. Again, I use salted butter for the frosting because I didn’t add any other salt.
- powdered sugar/white sugar. It’s the same, don’t worry!
- strawberry jam. As detailed above, you can also use preserved strawberries.
Chocolate ganache:
- heavy cream. In this ganache recipe, you can’t dip it in milk or mix it in halves because it’s low in fat and doesn’t set as well.
- butter. I also use salted butter.
- chocolate chips or chopped chocolate. Please use delicious chocolate here. Many chocolate chips have a slightly white, powdery coating. Cookies are fine, but if you’re looking for a smooth chocolate ganache, fine chocolate is the way to go!
Why are my brownies fluffy and cakey?
Fluffy brownies generally have a higher fat-to-flour ratio than cakey brownies, such as butter and chocolate, as well as cocoa powder. Cake brownies are high in flour and use baking powder/baking soda for leavening.
But this brownie recipe doesn’t call for baking soda or baking powder, but it does use cocoa powder… so what? please do not worry. We use enough fat to keep it dense. I also need to make frosting and ganache, so I wanted to create a super easy brownie recipe that doesn’t require melting chocolate and keeps the recipe simple and quick. Recognize?
Can I add fresh strawberries to my brownie mix?
Of course you can, but it’s not my favorite way to enjoy two flavors. I’ve also tried it and found that even putting fresh strawberries in the brownie mix, or even this homemade brownie recipe, leaves the brownie pieces soggy and doesn’t take away from the flavor. I just don’t like the texture.
How to store strawberry brownies:
These brownies are best stored in an airtight container in the refrigerator. Of course you can enjoy it at room temperature or leave it on the counter, but I prefer to slice it and savor it chilled.
Can this brownie be frozen?
absolutely! These cool really well! For maximum freshness, sliced or frozen in an airtight pan for up to 30 days.

Of course, you can add some variations to this recipe to get creative. Here are some ideas:
- Use whatever type of berry or fruit you would like to pair with chocolate. You can substitute any jam for the strawberry jam. Those raspberry brownies look delicious!
- You can also add white chocolate chips or use ganache on top of white chocolate instead of chocolate.
- Make strawberry cream cheese frosting instead of strawberry buttercream. Use 1/4 cup cream cheese + 1/4 cup butter + 2 1/2 cups powdered sugar + 1/4 cup strawberry jam.

Brownie:
- 1 cup melted butter
- 1/2 cup cocoa powder
- Four egg
- 1 1/2 tbsp vanilla
- 2 cups Granulated sugar
- 2 cups all purpose flour
Strawberry filling:
- 1/2 cup butter, room temperature
- 2 cups icing sugar
- 1/4 cup strawberry jam
Chocolate ganache:
- Brownie: Preheat oven to 350°F. In a mold of 9×13, Cooking Sheet Then coat with non-stick spray. Set it aside.
- in a bowl of stand mixer Mix melted butter and cocoa powder. Mix at medium speed until there are no lumps.
- Add eggs and vanilla and mix until thickened and smooth, about 1 minute.
- Add sugar and mix until dissolved, finally add flour and mix until combined.
- Spread into prepared tin and bake for 20-25 minutes, until center is set. Let cool completely.
- strawberry filling: in the bowl of a clean stand mixer paddle attachment Mix butter and powdered sugar. Add strawberry jam and mix until smooth and creamy. Spread this over the cooled brownies and refrigerate while the ganache is preparing.
- chocolate ganache: Serve in a microwave-safe bowl or bowl. potHeat the heavy cream until it starts to boil, but not boiling.
- put the butter chocolate chips Place in a medium bowl and pour the hot cream over the chocolate. Let the chocolate sit in the hot cream for 3-4 minutes and mix until smooth and without lumps.
- Remove the brownies from the refrigerator and pour the ganache over the strawberry filling. Spread the ganache using an offset spatula to coat the filling.
- Cover and refrigerate for about 1 hour until the ganache hardens.
- Cut into bars when ready to serve.
