  • 1 cup coarsely chopped peppermint bark
  • ⅓ cup COLD chocolate sauce, homemade or store-bought

  1. Place the candy and milk in a food processor or blender and pulse until the candy is finely ground and mostly dissolved in the milk.
  2. Whisk together the cream, sugar, vanilla, peppermint extract and salt. Pour into an ice cream maker and process according to the manufacturer’s instructions.
  3. Transfer 1/3 of the whipped ice cream to an airtight freezer container. Sprinkle with candy canes if desired and drizzle with chocolate sauce. Sprinkle with chopped peppermint bark. Repeat the layers two more times.
  4. Serve immediately as soft serve ice cream or freeze until firm.

My first cookie of choice for this recipe is Trader Joe’s seasonal candy canes Joe Joe’s. Whenever I can get them, I throw a few boxes in the freezer so I can use them (and snack on them) all year round.
