Chunky Monkey Ice Cream Recipe
To make this chunky monkey ice cream recipe, you’ll need the following ingredients:
- heavy cream
- milk
- sugar
- kosher salt
- vanilla extract
- very ripe bananas
- walnut
- chocolate chips
- coconut oil or vegetable oil

Start by whisking together the cream, milk, sugar, salt and vanilla in a large mixing bowl. Add them to the ice cream mixture and stir or whisk to combine.
Pour the mixture into an ice cream maker and freeze according to the manufacturer’s instructions.
While the ice cream is stirring, place the chocolate chips and coconut oil in a small microwave-safe glass bowl. Microwave for 90-120 seconds until soft. Stir to dissolve.
Then let the chocolate sit at room temperature until the ice cream has finished stirring. Do not add to ice cream while it is still warm.
Scoop the resulting ice cream into an airtight container, sprinkle chocolate on each addition to the container, and sprinkle walnuts on each scoop. Stir lightly with the tip of a knife or spoon and drizzle the remaining chocolate over the ice cream. Place in freezer until ready to serve.
