- Four cup waxy potato Cubes in 1/2-1/4 inch pieces
- 6 tablespoon salted butter
- 1 large yellow onion finely chopped
- 1 tablespoon minced garlic
- Four cup corned beef chop into 1/2 to 1/4 inch cubes
- salt and pepper to taste
- parsley optional, for garnish

Boil water in a pot and add potatoes. Boil for 7-8 minutes, drain and pat dry.

In a large skillet, melt the butter over medium-high heat. Add the chopped onion and simmer for 5 minutes.
