There’s something very comforting about cream of broccoli soup. We grew up with the canned version. As you know, we love recreating store-bought and restaurant-style meals. Not only are we strong believers in knowing exactly what to serve your family, but it’s also fun to play in the kitchen. Not to mention it will bring back all your childhood memories too. The old-fashioned cream of broccoli soup has always been a staple, but when we discovered how easy it was to make from scratch, we were hooked! Honestly, you probably already have most of the ingredients at home. Even better, it takes just over 30 minutes to make. It goes great with your favorite bread or a fresh salad. No matter how I eat, I know I’ll be back soon.

Can I use frozen broccoli instead of fresh broccoli?

I always prefer to use fresh broccoli in this recipe.It’s really easy to find and the price is almost always right! That said, if you have a large bag of frozen florets that you want to use in your freezer, that’s fine too. Just know that the soup can get a little runny due to the extra water.

How can I thicken the cream of my broccoli soup?

Adding flour does a lot for a consistency you all know and love. Fresh cream also thickens moderately.

To use cornstarch as a thickener Instead of the flour in the soup, you need to make a slurry first.To make the slurry, combine equal parts cornstarch and cold water in a small bowl and mix until the cornstarch is completely dissolved. Once the slurry is ready, slowly drop it into the soup while it’s simmering on the stove. Slowly add the slurry and keep stirring the soup to avoid lumps. You may need to simmer the soup for a few more minutes for the cornstarch to fully thicken the soup. .

Can I use something other than fresh cream?

If you don’t like cream, try half-and-half instead. I do not recommend using extra milk as it will not be creamy enough. Half and half doesn’t make the soup as creamy as whipped cream, but it’s still absolutely delicious!

One of the keys to a creamy, velvety old-fashioned broccoli cream soup is to mix everything together after cooking. The easiest way to do this is with a handy immersion blender. If you have a traditional blender at home with a vented lid, you can use that instead. Puree the soup to desired consistency.
