Irish Colcannon Simple Ingredients:
potato
green onion
cabbage or kale (a combination of both can be used)
butter
salt
black pepper
Evaporated milk (regular is fine, but evaporated milk is thicker)
You can add bacon, chives, a little garlic powder, or nutmeg to this dish. This Irish Colcannon can be reheated in the oven or microwave. As you can see, this is a very easy dish and your family will love it.

Colcannon of Ireland
- 6 to 8 potato peel and cut into cubes
- 1 cup Chopped green onion
- Four cup chopped cabbage or kale you can use a combination of both
- 1 8 or 1/2 cup stick butter or tbsp
- 1 tea spoon salt
- 1/2 tea spoon black pepper
- 3/4 cup evaporated milk You can use regular but it is richer when evaporated

Place the diced potatoes, chopped cabbage, and scallions in a large pot on the stovetop. Cover with water, reduce heat to low, and simmer for 15-20 minutes until potatoes are done.

Remove from stove and drain. Add butter, salt, pepper and milk. Mash until it looks like mashed potatoes. I only use a hand potato masher. Spoon into a casserole dish and serve. You can sprinkle it on top of the green onions.
