MEXICAN TATER TOT CASSEROLE

This delicious Mexican tater tot casserole is supper club and by Julia Refner from North Chesterfield, Virginia. When this recipe arrived, we knew we had to make it immediately. If you’ve been following this site for some time, you know we love tater tot recipes. I’ve never made a Mexican version, so this was really nice.

Mexican Tater Tot Casserole Ingredients needed:

Ground beef

octopus seasoning

frozen corn

salsa

mexican cheese blend

sour cream

tater tots

I loved that they combined the salsa, corn and taco seasoning with the meat and actually used the sour cream in the dish rather than as a topping. This casserole was really good and reheated very well. We had it several nights and everyone loved it. This casserole is ready very quickly and that’s the best part. All you need is one pot to make. He uses one frying pan, then he uses a 9X13 dish, so less cleanup.

Perfect for busy nights, I’d love to add this recipe to my rotation. Big thanks to Julia Reffner for sending me this wonderful recipe!

What you can change or add to this delicious dish:

  • You can vary the meat or use ground pork, ground chicken, or ground turkey. If you’re looking for more protein and less fat, ground chicken or ground turkey are the best options.
  • Save time by using frozen hash browns. This dish is ready very quickly.
  • You can also add other toppings such as green chillies, roasted tomatoes, green peppers, and onions.
  • You can easily add black or pinto beans to your meat mixture.
  • Change the cheese to your liking.
  • You can also top with fresh cilantro before serving.

  • I pound ground beef
  • 1 10 oz packaged frozen corn
  • 1 packet taco seasoning or homemade version
  • 1 16 oz salsa jar
  • 8 Oz mexican cheese blend
  • 1 16 oz container sour cream
  • 32 ounce bag of frozen tater tots
  • Preheat oven to 350F.

  • Brown ground beef in a medium skillet. (*It goes well with minced turkey.)

  • Add taco seasoning, salsa, and frozen corn to ground beef, mix well, and reheat in skillet.

  • Coat a 9×13-foot pan with nonstick spray.

  • Spread beef and corn mixture in bottom of 9×13 pan.

  • Spoon the sour cream over the beef and use a spatula to spread the mixture like frosting.

  • Layer half of the cheese package on top of the sour cream.

  • Place a layer of tater tots on top of the casserole.

  • Place the remaining cheese on top of the tater tots.

  • Bake in a 350F oven for 45 minutes. Cut into squares and enjoy!
