No-bake cookies matched with these no-bake chocolate peanut butter bars. It doesn’t get much easier than mixing everything together and pouring it into a pot.
Before I go into detail about these wonderful homemade candy bars, I should confess that I have a love-hate relationship with no-bake cookies.

I love how easy it is to make no-bake cookies. I hate how unattractive they tend to be. I love how intense the chocolate and peanut flavors are. I hate raw oatmeal, which often overwhelms cookies.
(The whole raw oatmeal situation is balanced by adding coconut to these no-bake chocolate coconut cookies or bars or bites…whatever you call them, coconut is the best thing possible. Change the texture (and improve it!) in a way.
When I come across these no-bake bars (aka “Best recipe I’ve ever screwed up“I can’t believe I never thought of turning cookies into bars. At least they look better, right?
I’ll be frank here to share my thoughts when I started making these treats.
“Kids love to eat desserts on the weekends, and I don’t want to eat more than one, so I’m going to make these,” I thought.
Chocolate Peanut Butter No-Bake Bar
It’s very funny in hindsight. I almost licked the saucepan clean as I waited for the bars to harden in the fridge.
The coconut, honey, and nuts added to these bars are far out of the league of traditional no-bake treats.
Oatmeal that other cookies don’t like? It’s not the main ingredient, it provides structure and just a hint of flavor.

These bars have many options. If you prefer a completely unprocessed ingredient list, use pure dark chocolate, natural peanut butter, and unsweetened coconut.
No-bake cookies and bars benefit greatly from the addition of coconut.The texture and flavor are second to none. If you’re like me and don’t plan on giving up refined sugar (and can’t wait to make a special trip to the store), use ingredients you happen to have at home.
I found that a 1 inch square piece of these bars satisfied my chocolate craving. (I can’t even describe how much I enjoyed these treats, one square at a time!)
Having enjoyed one of these with my husband late last night, we both agreed we were ashamed of store-bought candy bars.

To make this recipe you will need the following ingredients:
- peanut butter
- Honey
- coconut oil
- barley
- shredded coconut
- chopped pecans
- dark or semi-sweet chocolate chips
- vanilla extract
To make chocolate coconut bars, melt peanut butter, honey, and coconut oil in a medium-sized saucepan over low heat. Stir frequently as the mixture melts.
When melted, remove from heat and add chocolate. Stir until chocolate is completely smooth.
Add oats, coconut, and pecans. Mix. Pour the mixture into an 8×8 pan. Refrigerate for at least 3 to 4 hours, until chocolate hardens.
Slice into 1- to 2-inch squares. Store in an airtight container in the refrigerator.
To make this in the microwave, combine peanut butter, honey, coconut oil, and chocolate chips in a large glass mixing bowl. 90 seconds in the microwave on high power. Stir and return to microwave. Heat for an additional 90 seconds, until chocolate is nearly melted. Stir until smooth.

These crunchy, slightly crunchy peanut butter cereal bars have pockets stuffed with gooey marshmallows and are a hit every time I make them.
