Ingredients needed for Pineapple Pistachio Cake:
yellow cake mix without pudding
instant pistachio pudding
egg
sour cream
milk
crushed pineapple, not drained
You can use almond extract or vanilla
coconut
pecans, chopped or your favorite nuts
pistachio
I made this cake a few times with a basic powdered sugar glaze and topped it with pistachios and we all loved it. You can add or melt a can of whipped vanilla frosting in the microwave for about 12 seconds and pour it over the cake. You can use another package of pistachio pudding mixed with cold whip for frosting.
I keep this cake in a cool place or in the refrigerator.

This amazing cake is super easy to make and a family favorite. This cake is made with cake mix, but it looks like you spent hours in the kitchen!
Serving: 1 cake
- 1 (15.25 oz) yellow cake mix without pudding
- 1 (3.4 oz) Instant Pistachio Pudding
- 3 egg
- 1/4 cup sour cream
- 1 cup milk
- 1 (8 oz) canned pineapple crushed not drained
- 1 tea spoon You can use almond extract or vanilla
- 1 cup coconut
- 1 cup pecan your favorite nuts or chopped
- pistachio

Mix the pudding and cake mix with a wire whipper. Add eggs, sour cream, milk, uncooked pineapple, vanilla extract, coconut, and nuts. Mix well with a spoon. (A blender works, too.) You can spray it on a 9-inch bundt pan, or use a 9-by-13-inch pan with cooking spray.

Bake in a preheated 350 degree oven for 50-55 minutes, testing doneness by oven. Cool in the skillet for about 15 minutes and remove to a plate. Frost with your favorite frosting.
