Some days I feel like eating a classic comfort cookie, but I’m not sure which kind to make. I mean, do you want oatmeal raisin cookies? chocolate chip cookie? maybe both? Choosing which type of cookie to bake is a serious decision. Don’t take it lightly. So, on days when I’m indecisive, I make an oatmeal cookie bar that combines both the aforementioned cookies in one.

These crunchy cookie bars are perfectly soft, golden brown and chock full of sweet raisins. chocolate chips, crunchy walnuts. One bite and you’ll be addicted! These cookies are relatively good for you. I mean, they’re still desserts. But as far as desserts go, this cookie bar recipe is great because it has a lot of added fiber. Adding raisins provides a small amount of iron, and walnuts contain healthy fats.

  • chocolate chips: prefer semi-suite chocolate chipsbut you can also use milk chocolate ones, or white chocolate chips.
  • Raisins: Technically optional, but highly recommended!
  • Walnut: I love the crunch these chopped nuts add.

How to make oatmeal cookie bars

Cookie bars are the perfect dessert for when you’re lazy. The entire process takes just over 30 minutes as you don’t have to scoop and shape each cookie. So when sugar cravings strike, you don’t have to wait too long to cure them!

Here’s a step-by-step guide to making the best oatmeal cookie bars.

Preheat oven to 350°F. in a 9 x 13 inch baking dish parchment Coat with a non-stick spray.

Combine butter and sugar: in your bowl stand mixer equipped with paddle attachment Beat butter, brown sugar, and granulated sugar on medium speed for 2 minutes.

Add eggs: Also add vanilla, salt, cinnamon, baking soda and baking powder. Mix everything until smooth, scraping the sides of the bowl as needed.

  • How to check completion: The edges of the cookies should be golden brown and firm. It’s okay if the middle looks a little overdone. Bake in a frying pan while it cools down and it’s done.

  • rain: As with M&Ms, we think peanut butter cups are great in these cookie bars.
  • fruits: Raisins and dried cranberries come to mind first.
  • nuts: Walnuts are my go-to, but chopped pecans work just as well.

How to store leftover food

I like to store these cookies in an airtight container in the refrigerator for 4-5 days.You can also store them in an airtight container at room temperature for 2-3 days.

Can these be frozen?

Yes! Oatmeal cookie bars can be frozen in an airtight container. parchment 2-3 months.
