What kind of chicken should I use?
We always opt for boneless, skinless classic chicken breast.It can be easily cut into bite-sized cubes and is one of the budget-friendly proteins. That said, if you have another chicken fillet that cuts evenly, use that instead. Boneless thighs and tenderloins are our top substitute!
Alternatives to heavy cream:
If you want this recipe to be a little lighter, you can replace the cream with half-and-half or whole milk instead. Another option is to stir and melt the cream cheese at the end. Start with a few tablespoons and add until you get the desired creaminess.
Can frozen vegetables be used instead of fresh vegetables?
We want to make this recipe as easy as possible. If you have frozen vegetables that you want to use instead of raw vegetables, by all means! That’s half the beauty of this dish. You can absolutely use whatever you have on hand. We recommend thawing frozen spinach and squeezing out excess water first.
