I’ve heard that when you try to mix cocoa powder into milk or cream, it clumps and is difficult to smooth.

If you use cocoa powder and sugar together in a recipe, a trick I learned a long time ago is to whisk the cocoa powder with the sugar.

When the cocoa powder and sugar are mixed smoothly, add fresh cream and milk and heat. Continue whisking until the sugar and cocoa powder dissolve.

Remove the cocoa milk mixture from the heat and add the vanilla and peppermint extracts. Allow the mixture to cool to room temperature before pouring it into an ice cream maker.

  • heavy cream
  • whole milk
  • sugar
  • cocoa powder
  • kosher salt
  • vanilla extract
  • peppermint extract

instructions

  1. Mix heavy cream, milk, sugar, cocoa powder, and salt in a small saucepan. Warm the mixture over medium heat, whisking frequently until the sugar and cocoa are dissolved. Remove from heat and add the vanilla and peppermint extracts. Stir to combine and cool to room temperature.
  2. When ready to stir, whisk mixture again and pour mixture into ice cream maker.
  3. Transfer the finished ice cream to an airtight container and place in the freezer until serving. If you like, top with shaved chocolate and enjoy.
