This sausage, tomato and cheese grits casserole can be made with eggs for breakfast or as a main dish for dinner and served with green vegetables. We love grits all the time. They can be served in so many different ways and are a staple in most Southern homes.
Sausage, tomato and cheese grits casserole Ingredients needed:
pork sausage
Grits (regular or quick cooking grits)
onion
green pepper
salt
black pepper
minced garlic
melted butter
diced tomatoes and green chillies
shredded cheddar cheese or your favorite cheese
I recently remade this dish so I was able to update this recipe. That’s excellent. I love topping it with a fried egg and this dish reheats very well. Perfect to make early in the week and have for breakfast every morning. It’s also great for brunch and holiday weekends. The flavor is great, and if you want to add some heat to this casserole, you can always make it with spicy sausage.
Possible substitutions:
- Smoked sausage, Italian sausage, andouille sausage, spicy sausage can be used
- If you don’t like green chili peppers, use diced tomatoes.

This sausage, tomato and cheese grits casserole can be made with eggs for breakfast or as a main dish for dinner and served with green vegetables.
Serving: 8 serving
- 1/2 lb pork sausage This recipe can also use smoked sausages, or Italian or Polish dishes.
- 3 cup cooked grits (can be regular or quick cooking grits)
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper
- 1/2 tea spoon salt
- 1/4 tea spoon black pepper
- 1 tea spoon minced garlic
- 2 tablespoon butter melted
- 1 10-ounce can diced tomatoes and green chillies, not drained
- 1 1/2 cup shredded cheddar cheese or your favorite cheese

Combine sausage, onion, and peppers in skillet and brown on stove. Drain if necessary.

Stir in salt, black pepper, minced garlic, butter, tomatoes, and cooked grits. Simmer over low heat for 10 minutes.

Pour into a casserole dish. Topped with shredded cheddar cheese. Bake in a preheated 350 degree oven for 30-35 minutes.
