The first time I made this soup, I was staring at the fridge over Thanksgiving weekend and didn’t feel like warming up another plate of leftovers. (That’s what happens when you accidentally eat three times as much.)

I looked at the container – technically, it was almost a vat – a big package of potatoes and ham. I decided to check if it is possible.

The instant soup was excellent and there was very little leftovers.

We loved that soup so much we wanted to make it again, but we don’t usually have piles of mashed potatoes just waiting to be used regularly.

If you already have a lot of mashed potatoes in your fridge, skip the diced potatoes in the recipe below and add the mashed potatoes after the other vegetables have softened.

Simple ingredients come together in this hearty, creamy potato chowder. A classic trio of celery, carrots, and onions pair with potatoes as the perfect base for salty chunks of ham.

Add all the vegetables and ham to the slow cooker, season with salt and pepper, and pour in the chicken stock. Reduce heat and cook for 6 hours. (If you are in a hurry, it will be ready in about 4 hours over high heat.)

When the soup is nearing the end of its cooking time, ladle some of the soup and whisk in the flour. (This creates a smooth slurry that is used to thicken the soup.)

Return the flour slurry to the pan with the heavy cream. Mix.

Heavy cream, milk, or half and half work well in this recipe. For lighter chowder, use milk instead of cream. I enjoy the smooth richness of the cream in soups and chowders, but feel free to use whatever dairy you have on hand.

Cook the soup for a few minutes and reheat it after adding the cold cream. Taste and adjust seasoning as needed. Potatoes require more seasoning than you might imagine, so be sure to add plenty of salt to bring out the flavor.

This soup, when ready, can be kept on the warm (lowest possible) crockpot setting for up to 2 hours. Serve generously with crusty bread for dipping.

  • ground black pepper
  • chicken soup
  • flour
  • fresh cream, half & half, or milk

Adequate seasoning is key for such a simple recipe. The amount of salt you need depends on how salty your ham and chicken broth is.

Start with a teaspoon or so of salt, stir until perfect, add salt, and continue tasting the soup. I often add a couple of teaspoons of salt to this soup.
