This cheesy smoked sausage and rice casserole is a family favorite. It’s super easy to make and a great filling dish. It’s easy to put away, so it’s perfect for busy nights. Everyone in my family loved it and kept coming back for seconds.

Cheesy Smoked Sausage and Rice Casserole Ingredients needed:

smoked sausage

cooking oil

onion

green pepper

celery

cream of mushroom soup

beef or chicken soup

milk

cooked rice

garlic powder

smoked paprika

salt and pepper

Cheddar cheese

This casserole makes a great potluck dish. Easy to make and goes with anything. People always ask if smoke his sausages need to be charred. Technically, most smoked sausages don’t need to be charred. For this recipe, the combination of bell peppers, onions, celery and sausage charred together makes this casserole more flavorful.

This dish is easy to freeze and can be stored in an airtight container in the refrigerator for about 5 days.

  • 1 lb smoked sausage slice into rounds
  • 2 tablespoon cooking oil
  • 1 cup chopped onion
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped celery
  • 1 10.5 oz can cream mushroom soup
  • 1 14.5 oz can beef or chicken broth
  • 1/3 cup milk
  • 2 1/2 cup cooked rice
  • 1/2 tea spoon garlic powder
  • 1/2 tea spoon smoked paprika
  • 1/2 tea spoon salt
  • 1/4 tea spoon black pepper
  • 2 cup shredded cheddar cheese Divided
  • Heat the oil in a frying pan. Brown sausage, onions, green peppers and celery.

  • Add broth, broth, milk and rice. Stir in garlic powder, paprika, salt and pepper.

  • Simmer for 5 to 10 minutes.

  • Pour into a casserole dish.

  • Stir in 1 cup of cheese.

  • Bake uncovered in preheated 350 degree oven for 45 minutes.

  • Scoop out the remaining 1 cup shredded cheddar cheese and sprinkle.
