  • Four lb maroon potatoes washed and peeled
  • 8 cup chicken soup
  • 1/2 cup salted butter
  • 2 cup sour cream
  • 2 cup Cheddar cheese split, shredded
  • 1/2 cup green onion diced
  • 1 cup bacon cooked and crushed
  • 1 tea spoon salt taste
  • 1 tea spoon black pepper taste

procedure

  • Scrub the potatoes. Peel the potatoes, leaving some of the skin on. Cube into 2 inch pieces.

  • Place the potatoes in the pot with the chicken broth and bring to a boil over high heat. Reduce heat to medium-low and simmer until potatoes are tender (about 15-20 minutes).
