Welcome to the weekend, my friend! I’m a little obsessed with the weather right now. The warm sun is irresistible this week. I try to go outside every day, even if it’s just for a short walk.

It’s going to be a chilly rainy day next week, but I’m looking forward to it. I love cozy sweater days, and I don’t think there will be many more this spring.

on the blog This week: These easy pan-fried pork chops with balsamic and Dijon are a great weekday meal that can be put together in under 20 minutes. Very little leftovers at the end.

Zucchini, Mushroom and Sausage with Penne With spicy sauce for an easy dinner win in this simple skillet.

Strawberry Romanoff is the most delicious thing I’ve made recently.A friend of mine Rin I was here a few weeks ago and made this to take pictures so I may have eaten the full recipe myself. I probably shouldn’t admit these things but yeah we I did it.

Almost unbelievably delicious recipes on a divine, mind-blowing level.I stood in front of the stove and almost inhaled this Broccoli mushroom casserole After the first taste. (Yeah, you see what I just wrote, it’s really good!) I took a bite of the broccoli and then started eating the mushrooms.

Have you ever eaten flourless chocolate cake? If so, you’ll never forget the first bite. Unassuming to look at and surprisingly easy to make, this cake is a wonderful decadent treat. Also, if there’s one thing you need to know how to make from scratch, I’d vote for you knowing how to make whipped cream. Think of it as a life skill.

Lemon Ice Cream is a creamy, rich ice cream with an unexpected lemon fresh glow. If you’re still not convinced you should try this, my eldest son chose this ice cream over chocolate ice cream two nights in a row, proclaiming it to be one of the best ice creams he’s ever made. Did.

What I crave: It’s almost an embarrassment how often I buy frozen chicken taquitos at Costco. (If you haven’t already, they’re made with flour tortillas and are more like flautas.) Anyway, all I can say is that my family really likes them.this Chicken flauta recipe. They caught my eye this week and I’m thinking it’s time to make my own. They look as easy as possible and the variations can be endless.

My Favorites this week Casserole skillet covered with red enamelI am obsessed with these enamel pans. This one I’ve already shared with you countless recipes months ago. I found this gorgeous red one at Lodge last week. It feels a little heavy.

As for which one I prefer so far, I can’t say I like either. I will continue to use it, so I will let you know. If you want to buy American-made products, I think the Lodge skillet is worth the slightly higher price.

what i am reading: the girl they left behind By Roxanne Veretzos. This book tells the unlikely but true life story of the author’s mother. Reminiscent of her Sophie choice, this child’s Jewish parents left her on the doorstep of their Bucharest apartment in 1941, hoping to protect her from the coming war.

They left her a note that read, “In anguish and despair, we leave this child in the hands of God with hope and faith that he will be saved.” The child, the author’s mother, was taken to an orphanage and eventually adopted by a Christian family.

To be honest, this book dragged on quite a bit at times and at one point I was so annoyed with the main character that I almost stopped reading the book. Despite putting the book down a few times, I’m glad I finished because the ending was unexpected and lovely. It’s a solid four-star read for me, and I recommend it.
