This ground beef and rice skillet is perfect when you want a quick dinner. It’s flavorful and comes together quickly. It’s a versatile dish and a great reheat. I’ve even been known to serve this dish as a dip and it’s always a hit!
Ingredients needed for ground beef and rice skillet:
Ground beef
diced red onion
minced garlic
smoked paprika
cumin
green enchilada sauce
pinto beans
green chili
lotus tomato
cooked rice
shredded cheddar cheese
Recipe note:
- Feel free to use black beans instead of pinto beans
- Any flavor of cheese works well with this dish
- Once cooked, top with guacamole, salsa, sour cream, coriander and more
- You can also wrap this meat mixture in a tortilla, place it on a bed of lettuce, or serve it with tortilla chips.

ground beef and rice skillet
This simple skillet meal is packed with flavor!
Serving: Four serving
- 1 lb of ground beef
- 1/4 cup diced red onion
- 1/2 tea spoon minced garlic
- 1 1/2 tea spoon smoked paprika
- 1/2 tea spoon of cumin
- 1 (14 oz) canned green enchilada sauce
- 1 (15 oz) canned pinto beans Dead
- 1 (4.5 oz) canned green chillies
- 1 (10 oz) Canned Mild Rotel Tomatoes Dead
- 2 cup Cooked white rice
- 1 cup shredded cheddar cheese

Add the red onion, minced garlic, and minced meat to a 10-inch skillet over medium heat. Drain the grease. Add smoked paprika and cumin and mix. Stir in enchilada sauce, pinto beans, green chillies, and roasted tomatoes.

Stir until combined, then add the cooked rice to the meat mixture. Sprinkle with cheddar cheese. Serve with sour cream and tortilla chips.
