If you love fruit desserts perfect for summer and want to do something a little different than cobbler or fruit salad, these blueberry crumble bars are just what you’re looking for. These sweet bars are always a hit at any BBQ, party or event and I am constantly asked for the recipe.

The topping crumble is also crust!

What makes this blueberry bar so easy is that the crumb topping is also dough. This makes the preparation steps a lot easier. The crumb topping is a buttery streusel-style layer that is simply tucked in half into the bottom of the mold and topped with the rest of the mixture.

Thanks to the rolled oats, it’s sweet and rich, and the texture is perfect!

This recipe includes two parts, blueberries and crumble mix. The simplicity of it makes for a great recipe. See the full ingredients list for the printable recipe card at the bottom of the post.

crumble mixture: All purpose flour, old fashioned oats, light brown sugar, salt, butter, granulated sugar.

blueberry mix: Cornstarch, blueberry, lemon juice

How to make blueberry crumble bars:

crumble mixture: Combine flour, oats, brown sugar and salt in a blender or food processor. Add cold butter and mix until very coarse and sandy.

Divide the mixture in half and press one half into a greased mold. 9×9 pan. Let’s put this aside.

filling: Put granulated sugar and cornstarch in a large bowl and mix. Add blueberries and coat with sugar mixture. Add lemon juice and mix.

Spread blueberries over the dough. Spread remaining dough mixture evenly over blueberries, pressing lightly into blueberries. Chill the pan in the refrigerator for 30 minutes.

bake: Preheat the oven to 350°F and bake for 35-40 minutes until the fruit starts bubbling.

Tips when making blueberry crumble bars:

What I love most about this recipe is how easy it is. Here are some tips to make the process super easy.

  1. I use a blender to mix the ingredients, but a food processor works just as well. Or, if you love using pastry cutters without straining your elbows, use “quick oats” instead of the old-fashioned method.
  2. Coating fresh blueberries with sugar and cornstarch creates a sweet filling that also thickens thanks to the cornstarch.
  3. The blueberries will begin to bubble as they bake. This means that the bar is almost finished. Don’t overcook the bar. Overcooking will make the crust and topping too hard to cut. Trust me on this one!

Can I use frozen blueberries?

Yes of course you can. Simply thaw the blueberries and pat dry. This is a great recipe to make when blueberries are at their ripest, but frozen blueberries are also a great alternative. I always buy or pick extra blueberries during peak season so I can freeze them and enjoy them all year round.

variation:

  • please add lemon! Lemons and blueberries go surprisingly well together, so adding lemons to this recipe is easy. I already added the lemon juice to the filling, but I also took the lemon zest and added the zest to the crumble mixture.
  • use other berries. You can substitute blackberries or raspberries for the blueberries in this recipe, or combine all three.
  • please add cinnamon. Adding cinnamon to the crumble mix adds a warm spice to the topping. Just one teaspoon is enough!

How do you store these blueberry bars?

We recommend keeping these bars sealed in the refrigerator for up to 3 days. You can store it at room temperature, but we recommend storing it only overnight. The moisture in the blueberries will make the topping a little soggy, but chilling it in the fridge can slow down this process.

Can you freeze blueberry crumble bars?

that’s right! These bars cool well. You can thaw it in the refrigerator and chill it, or you can enjoy it at room temperature!

  3. Divide the mixture in half and press the halves into the bottom of the prepared molds to form a crust. Set it aside.
  4. filling: Put granulated sugar and cornstarch in a large bowl and mix. Add blueberries and coat with sugar mixture. Add lemon juice and mix.
  5. Spread blueberries over the dough.
  6. Finally spread the remaining dough mixture over the blueberries and press lightly.
  7. Chill the pan in the refrigerator for 30 minutes.
  8. Preheat oven to 350°F and bake for 35-40 minutes until fruit begins to bubble.

Note

Be careful not to overbake as the dough will be too hard.
Chilling the bars before baking is not essential.

Can be stored in an airtight container in the refrigerator for up to 3 days.
