Ingredients needed for a busy day cake:
softened butter
brown sugar
buttermilk
baking soda
all purpose flour
vanilla extract
Topping ingredients:
softened butter
brown sugar
milk
shredded sweetened coconut
vanilla extract
pecan
Recipe note:
- You can certainly leave the frosting on this cake and dust it with powdered sugar or whipped cream.
- You can easily substitute walnuts for pecans for frosting.
- You can probably double this dessert easily. However, be careful with the baking time.

This cake is so simple! No eggs needed. It will become a family favorite!
Serving: 8 serving
- 1/4 cup butter softened
- 1 cup brown sugar
- 1 cup buttermilk
- 1 tea spoon baking soda
- 1 1/2 cup all purpose flour
- 1 tea spoon vanilla extract
Ingredients for topping
- 3 tablespoon butter softened
- 1/2 cup brown sugar
- 2 tablespoon milk
- 1/2 cup chopped sweetened coconut
- 1 tea spoon vanilla extract
- 1/2 cup pecan
Cake description:

Cream the butter and sugar in a mixer. Add buttermilk and vanilla extract. Whisk together baking soda and flour and add to other ingredients. Continue mixing until all ingredients are moistened.

Spray an 8 x 8 baking pan and add batter. Bake in preheated 375 degree oven for 30 minutes or until center test is done. Add the toppings while the cake is still warm.
Topping instructions:

Mix softened butter, sugar and milk with a spoon. Add coconut and vanilla essence. Spread it over the cake. Sprinkle with pecan nuts. Place cake under broiler for about 1 minute or until toppings are bubbly.
