In this flavorful chicken and bok choy stir-fry, crunchy, tender bok choy and diced jalapenos are served with saucy chicken bites.

When I saw this recipe in an issue of Everyday Food, I immediately added bok choy to my grocery list.
This was a hit with the whole family. It’s amazing how a great sauce makes even my picky eater devour every bite on the plate.
In this recipe, there is very little heat from the jalapenos, just adding another layer of flavor to the dish.
My family enjoys spicy food and I often add more jalapeños because a little heat is a great addition to this recipe.

Bok Choy is a mild and slightly sweet Chinese cabbage. Tender green leaves and flavorful crispy stems add delicious texture and color to this dish.

French fries come together fairly quickly in one skillet over medium to high heat.

Make sauce by combining soy sauce, vinegar and brown sugar. Set the sauce aside, next to the store.
Cut the chicken thighs into bite-sized pieces and sprinkle with garlic, ginger and cornstarch. Chop the bok choy and jalapenos so they can be added to the skillet.

Sauté chicken mixture in large skillet; Cook until lightly browned and chicken is barely cooked. It doesn’t need to be fully heated as it will continue to heat as you add the other ingredients.
The ginger and garlic smells so good at this point and makes the kitchen smell so good.

Add the bok choy and jalapenos to the pan. Cook for about 1 minute.
The bok choy leaves will wilt and soften, but the stems will remain slightly firmer and crunchy, giving them a better texture in stir-fries.

Pour in the soy sauce mixture and stir to coat the chicken and bok choy.
Cook over medium-high heat for a few more minutes until sauce thickens and all sides are nicely coated.

- boneless skinless chicken thigh or breast
- cornstarch
- Bok-choy
- jalapeno pepper
- Olive oil
- ginger
- garlic
- soy sauce
- rice vinegar
- brown sugar
