Old-fashioned apple crisp has been a standby recipe for me for a long time.

Crisp the apples and add a bag of cranberries, yes, a whole bag. Who wants half a cup of leftover berries floating around the fridge? It’s the perfect cranberry apple crisp.

Well, that’s pretty much it. I like something sour, but crisps need sugar mixed with fruit to help cranberries.

I always wonder, who peels and crisps apples? They cook well and I’m good at skipping that step.

I know cranberries are only available fresh during the late fall and early winter months, but it has been my personal mission to find a way to enjoy them all year round. They freeze very easily.

To make it even easier, nothing special. Just toss the bag in the freezer. I’ve found that frozen and fresh are pretty compatible. I don’t have the recipe I wrote yet, but you can’t trade fresh for frozen or vice versa.

Cranberry Apple Crisps are not only delicious to eat, but we love the bright red festive color of the berries contrasting with the white apple slices. Cranberry and apple slices tossed with sugar, cinnamon, nutmeg and salt for a crispy finish.

I don’t always use cornstarch in fruit potato chips, but cranberries help. Cranberries contain a fair amount of water, which comes out during the baking process, so the cornstarch thickens the dessert nicely.

Apple Cranberry Crisp Recipe

  1. Preheat oven to 400°. Butter a 9×13 pan. Place cranberries and apples in a large bowl and sprinkle with sugar, cinnamon, nutmeg, salt and cornstarch. Stir to coat the fruit and set aside while you assemble the topping.
  2. Stir together oats, flour, brown sugar, and butter. Pour the fruit into a greased pan and sprinkle the oat mixture over the fruit.
  3. Bake until crust is browned and fruit mixture is bubbly, 24 to 28 minutes. Serve warm with vanilla ice cream or whipped cream.
