A creamy cucumber salad is a summertime staple at picnics, barbecues, and potlucks.

cucumber – For this recipe, use long English or Persian cucumbers that have thin skins and don’t need to be peeled (but you can peel them if you prefer).

Field cucumbers can be tough-skinned, so peel them (or remove a few strips). Cucumber seeds in the field are large and can be scraped out with a spoon.

onion – Sweet white or red onions are optional, but add a nice flavor to this cucumber salad. Slice the onions into thin slices and soak them in cold water while you prepare the salad to remove some of the onion’s harshness.

variation – This salad pairs wonderfully with fresh garden herbs such as basil and dill. Chop and mix your favorites.

Dressing – Making this cucumber salad dressing is easy. Combine sour cream, mayonnaise, vinegar, seasonings and a little sugar. You can also substitute plain Greek yogurt for the sour cream if you prefer.

How to make creamy cucumber salad

The best cucumber salad recipes are simple and the cucumbers really shine.

  1. Using a sharp knife or mandolin, slice the cucumber into 1/4-inch thick slices.If adding onions, slice thinly. according to the recipe below.
  2. Mix the dressing ingredients in a bowl, add the cucumber, onion, and dill and mix.
  3. Refrigerate 1 hour before serving. Garnish with more chopped dill.

To make the cucumber salad first

This recipe can be made 4-5 hours ahead for best flavor. This will keep the cucumbers crispy!

If you want to make it further ahead, slice the cucumber and onion, if using, and store them in an airtight container separately from the dressing. Mix the two together 1 hour before eating.


Creamy cucumber salad will keep in the refrigerator for 2-3 days. Drain all juices before serving and add a little extra sour cream if desired.

  • Wash cucumbers and cut into 1/4-inch thick slices.

  • Whisk sour cream, mayonnaise, dill, vinegar, sugar, and 1/8 teaspoon salt in a large bowl.

  • Add cucumber and onion, if using, and mix gently to coat.

  • Refrigerate for 1 hour before serving.

  • Taste and season with additional salt and pepper, and sprinkle with additional fresh dill if desired.

If using field cucumbers, peel them and scrape out the seeds with a spoon.
You can also add fresh herbs such as basil, parsley, and dill.
Leftover salad can be stored in the refrigerator for 2-3 days. Drain and stir before serving.
