This Mixed Berry Baked Oatmeal recipe is super easy to make and a great way to enjoy oatmeal. You can use any berries you enjoy and this is a great brunch recipe. It was very delicious! I love the combination of almond flavor and berries!
Mixed Berry Baked Oatmeal Ingredients:
Strawberries and blueberries (or berries of your choice)
old fashioned rolled oats
cinnamon
brown sugar
milk or evaporated milk
egg
Honey
almond extract
sliver almond
As you can see, these are very simple ingredients and this dish is ready in no time. It’s a very versatile dish that reheats well. I think this is the perfect dish to make on a Sunday and enjoy on busy mornings.
You can easily substitute vanilla extract for the almonds. I enjoy almonds in this dish. If using vanilla, topping with pecans makes a great combination. I also used evaporated milk for this, but you could easily use 2% or whole milk.
We served this in cute little teacups and everyone enjoyed it! Perfect for brunch and easy to serve this way.

mixed berry oatmeal bake
This easy berry oatmeal bake will quickly become a favorite!
Serving: 6 serving
- 2.5 cup berry with strawberries and blueberries
- 1 cup old fashioned rolled oats
- 1 tea spoon of cinnamon
- 1/3 cup of brown sugar
- 1 cup of milk I used evaporated milk
- 1 egg beaten
- 1 tablespoon of honey
- 1 tea spoon of almond extract
- 1/2 cup sliced almonds

Preheat oven to 350 degrees. Spray a 9-inch-deep pie plate with cooking spray.

Add 2 cups of berries to the plate, and in another bowl, toss the oats, cinnamon, and brown sugar. Mix together and spread over the berries.

In another bowl, combine eggs, milk, honey and almond essence. Mix with a spoon and pour over the berries, moving the plate to evenly cover the oatmeal mixture.

Top with remaining fruit and sliced almonds.

Bake for 40-45 minutes or until oatmeal is golden brown. Topped with whipped cream for an authentic feast!
