Palmier cookies are light, airy, buttery, sugar-dusted cookies that require only two ingredients.
Palmiers, elephant ears, French hearts, palm leaves, whatever you call them, these cookies are my all-time favorites.

I can’t stop grinning as I sit here tonight writing about these flaky sweet French cookies. I love palmiers and made a batch of them for my birthday a few years ago instead of a cake.
If that doesn’t say much about how much I enjoy these airy cookies, I don’t know. From the first bite, this has become one of my favorite treats.
What is Palmier?
Today I’m going to show you the easiest cookies ever to make. Not only are these cookies amazingly easy to make, he’s become one of my favorite cookies from the first bite.
Making these flaky, sweet, buttery and delicate cookies is surprisingly easy!
There are only two ingredients needed to make palmiers: frozen puff pastry and white granulated sugar. No special tools required.

Remove the pie crust from the freezer about 30 minutes before you start making the cookies.
Soft enough to spread easily, not warm and soft enough to stick together. 30-40 minutes is just right.

How to make palmier
Sprinkle work surface with 1/4 cup sugar. Unfold the pastry and place it on the sugar. Sprinkle another 1/4 cup sugar on top.
use rolling pin Lightly roll the dough to smooth it out a bit. Spread it out just enough to make sure the seams are connected. If it breaks, push it back together.

Roll the short edge of the dough toward the middle so it fits as snugly as possible.
Once both sides have been rolled to the center, lightly press them together and place the rolled dough tube onto the parchment lined top baking sheet.
Most freezer boxes of pie crusts contain 2 slices of pie crust. Repeat process with second pie crust if desired.

Chill the rolled dough in the refrigerator for 1 hour.
For best results, allow the dough to cool after rolling. That said, we don’t always wait for the rolled dough to cool before slicing and baking.
The resulting cookies will spread a little more if not chilled before slicing.

Palmier cookie recipe how to make
Preheat oven to 400°F. Remove the rolled dough from the refrigerator and place it on the cutting surface.
Slice the cookies about 1/2 inch wide and place them a few inches apart on a parchment-lined baking sheet.

I only place 9 cookies on each half-sized sheet pan.
Press down small rolls of cookie dough before baking.

Bake for 12 minutes until the edges of each parmier are light golden brown.
