Pineapple Banana Bread is one of my favorite recipes. We always have bananas in our house and we are always looking for new recipes using bananas. I made this bread with vanilla wafers, pineapple juice and nuts for toppings and loved it. Vanilla wafers add a nice texture to this bread.
Pineapple Banana Bread Ingredients needed:
whole wheat flour
all purpose flour
brown sugar (light or dark)
20 oz can of crushed pineapple
Pineapple juice from crushed pineapple cans
walnuts or pecans
This bread was a complete experiment with great results! Trust me..I’ve made some that weren’t, but this is part of the fun in the kitchen. You can always leave the nuts off. I would love to try different fruits with this bread, but I haven’t tried it yet.

Pineapple Banana Bread Nutty Vanilla Wafer Topping
This Pineapple Banana Bread recipe is one of my favorite bread recipes. Repeat this over and over.
Serving: 2 bread
- 2 cup whole wheat flour
- 1 cup all purpose flour
- 2 tea spoon baking powder
- 1 cup brown sugar
- 1/2 cup white sugar
- 2 tea spoon ground cinnamon
- 3 egg
- 1/2 cup oil (I use canola)
- 1/2 cup sour cream
- 3 medium banana Peeled and mashed. (mine was too ripe)
- 1 20 oz can mash well drained pineapple.Reserve 1/4 cup of pineapple juice for topping
- 1 cup crushed vanilla wafers (Place about 20 wafers in a ziplock plastic bag and crush with a rolling pin.)
- 1/4 cup binapple juice
- 1/4 cup sugar
- 1/2 cup walnut pieces you can use more nuts you like
Whisk all dry ingredients in a large bowl. Add the eggs, oil, sour cream, mashed bananas and crushed pineapple and blend with a mixer. Pour two 9-inch loaf sprayed into his pan. Add toppings.
Mix wafer crumbs with pineapple juice and sugar. 1 teaspoon over bread dough. Sprinkle with walnuts or nuts.
Bake in a preheated 350 degree oven for 60-65 minutes, or until browned in the center.
