Combine roasted potatoes and brussels sprouts with spicy sausage and plenty of cheese for a mouthwatering dinner.

A few years ago I stumbled across a dish that combined Brussels sprouts with pasta and potatoes, and after a few days the combination stuck in my head.

When I started experimenting with the idea of using brussels sprouts in my main dish, I wanted something a little more hearty than the bacon that is usually paired with brussels sprouts.
Sausage is one of the ingredients in magical recipes. It hardly matters what you add. Sausage has the ability to flavor all other ingredients wonderfully.
Loved the combination of flavors in this meal, paired with spicy sausage and Brussels sprouts. I couldn’t agree more.

Since then, I have tried to retake this recipe many times to update the photos, but decided not to take a photo as soon as it came out of the oven. It’s one.

I have made this recipe several different ways. The original version included a few extra dishes, but even with a few extra pots to rinse with, it was a very easy dinner.
However, over time, we’ve simplified it considerably. Just add the brussels to the sheet pan halfway through cooking, along with the potatoes.
If you have a large enough skillet, this miso pot!) Then you can combine everything in the same oven-safe pan you cook sausages in, bake in the same pan and let the cheese melt in the oven.
If you want a larger plate, or just want a pretty presentation, you can combine everything in a 9×13 casserole dish that you grease before baking.

To make this recipe, start by roasting the potatoes. Cut the Brussels sprouts in half while the potatoes are in the oven. Toss the brussels with oil, salt, and pepper.
Add the brussels to the pan with the potatoes and continue roasting until both the potatoes and brussels are lightly browned and tender.
Meanwhile, cook sausage in skillet over medium-high heat to crumble. Add roasted potatoes and brussels sprouts to skillet along with sausage.
Sprinkle with thyme and mix the cheese cubes as evenly as possible throughout the dish. Sprinkle with parmesan cheese.
Bake until cheese melts, about 15 minutes. Let rest for 10 minutes before serving. If necessary, stir just before serving.

Roasted potatoes and brussels sprouts have been a dinner staple in our house for nearly a decade, and I can’t recommend them enough. I’ve been making this for a long time and dividing it into lunch boxes.
Unfortunately for me, my kids have grown to love this too and I’m lucky these days to get the leftovers to myself.
