Place the flour in a shallow bowl or plate. Place the eggs in a second shallow dish and beat with a fork.

In a third shallow dish, combine bread crumbs, Italian seasoned bread crumbs, grated Parmesan cheese, 2 tablespoons fresh parsley, 1/2 teaspoon salt, and 1/4 teaspoon pepper.

Using a meat mallet, pound chicken breast to 1/2-inch thickness. After pounding, you can cut large ones in half. Pat chicken dry with paper towels and season with 1/2 teaspoon salt and 1/4 teaspoon black pepper.

Dust chicken with flour and shake to remove excess flour. Dip the chicken in the beaten egg, sprinkle with bread crumbs, and press lightly to adhere.
